Pork Menudo
Pork Menudo is a classic Filipino stew made with tender pork, liver, potatoes, carrots, bell peppers, and raisins simmered in a rich tomato-based sauce. Ingredients
1kg pork shoulder, cut into cubes
200g pork liver, cubed
2 medium potatoes, peeled and cubed
2 medium carrots, peeled and cubed
1 red bell pepper, diced
1 medium onion, chopped
4 cloves garlic, minced
2 cups tomato sauce
1 cup pork broth or water
2 tbsp soy sauce
2 tbsp cooking oil
1/4 cup raisins
1/2 cup green peas
1 tsp ground black pepper
1 tsp salt (or to taste)
2 bay leaves
Directions
- Heat the cooking oil in a large pot over medium heat. Sauté the garlic and onions until fragrant and translucent.
- Add the pork cubes and cook until lightly browned on all sides. Stir in the soy sauce and cook for another 2 minutes.
- Pour in the tomato sauce and pork broth. Add the bay leaves, then bring to a boil. Reduce the heat, cover, and simmer for 30 minutes or until the pork is tender.
- Add the potatoes and carrots, then cook for 10–15 minutes until almost tender.
- Stir in the pork liver, bell pepper, raisins, and green peas. Season with salt and ground black pepper, then simmer for another 5–8 minutes until the liver is cooked and the vegetables are tender.
- Remove from heat and transfer to a serving bowl. Serve hot with steamed rice and enjoy!
