Pork Barbecue
Pork Barbecue is a popular Filipino grilled dish made with tender slices of pork marinated in a flavorful blend of soy sauce, calamansi, garlic, brown sugar, and spices. Ingredients
1kg pork shoulder or pork belly, sliced into thin strips
1/4 cup soy sauce
1/4 cup calamansi juice (or lemon juice)
1/4 cup brown sugar
6 cloves garlic, minced
tsp ground black pepper
2 tbsp banana ketchup
2 tbsp oyster sauce
2 tbsp cooking oil
Bamboo skewers, soaked in water
Directions
- In a large bowl, combine the soy sauce, calamansi juice, brown sugar, garlic, ground black pepper, banana ketchup, oyster sauce, and cooking oil. Mix well until the sugar dissolves.
- Add the pork strips and coat them evenly with the marinade. Cover and refrigerate for at least 4 hours or overnight for the best flavor.
- Thread the marinated pork onto the soaked bamboo skewers, leaving a small space between each piece for even cooking.
- Grill the pork barbecue over medium-hot charcoal for 12–15 minutes, turning occasionally and basting with the remaining marinade until the pork is fully cooked and lightly caramelized.
- Transfer to a serving platter and serve hot with steamed rice, pickled vegetables, or your favorite dipping sauce. Enjoy!
