Ingredients

4 cups dashi broth or water

200g firm tofu, cut into small cubes

2 tbsp dried wakame seaweed

2 spring onions, thinly sliced

1 tsp soy sauce (optional)

Directions

  1. Pour the dashi broth into a pot and bring it to a gentle simmer over medium heat.
  2. Add the dried wakame seaweed and simmer for 2–3 minutes, allowing it to soften and expand.
  3. Add the cubed tofu and cook gently for another 2–3 minutes. Avoid boiling the soup vigorously to keep the tofu intact.
  4. Place the miso paste in a small bowl. Add a little warm broth and stir until the miso is completely dissolved.
  5. Pour the dissolved miso mixture back into the pot and stir gently. Add soy sauce if desired.
  6. Turn off the heat once the miso has been incorporated. Avoid boiling after adding the miso to preserve its flavor.
  7. Ladle the soup into serving bowls and garnish with sliced spring onions.
  8. Serve warm and enjoy your comforting Miso Soup!
