Maja Blanca
Maja Blanca is a classic Filipino coconut pudding made with coconut milk, cornstarch, sweetened condensed milk, and whole corn kernels. This creamy and lightly sweet dessert has a smooth, firm texture and is often topped with toasted coconut, grated cheese, or sweet corn for added flavor. Ingredients
2 cups coconut milk
1 cup fresh milk
1 can (300ml) sweetened condensed milk
1 cup cornstarch
1 cup whole kernel corn, drained
1/2 cup granulated sugar
1 tsp vanilla extract (optional)
1/4 cup toasted coconut flakes or grated cheese (for topping)
Directions
- In a saucepan, combine the coconut milk, fresh milk, sweetened condensed milk, and granulated sugar. Stir over medium heat until the sugar is dissolved.
- Dissolve the cornstarch in a small amount of water or milk until smooth. Gradually pour it into the saucepan while continuously stirring to prevent lumps.
- Continue cooking and stirring until the mixture thickens into a smooth, creamy consistency.
- Fold in the whole kernel corn and vanilla extract, then cook for another 2–3 minutes until well combined.
- Pour the mixture into a lightly greased serving dish or mold. Smooth the top with a spatula and let it cool to room temperature.
- Refrigerate for at least 2 hours or until fully set. Garnish with toasted coconut flakes or grated cheese before slicing and serving.
