Ingredients

1 can (300ml) sweetened condensed milk

1 can (370ml) evaporated milk

1 tsp vanilla extract

cup granulated sugar (for caramel)

Directions

  1. Place the granulated sugar in a llanera or heatproof mold over low heat. Allow it to melt until it turns into a golden caramel, then carefully swirl to coat the bottom evenly. Set aside to cool and harden.
  2. In a mixing bowl, gently whisk the egg yolks. Add the sweetened condensed milk, evaporated milk, and vanilla extract. Stir until well combined without creating too many bubbles.
  3. Strain the custard mixture through a fine-mesh sieve into the prepared llanera to achieve a smooth texture.
  4. Cover the llanera tightly with aluminum foil. Steam over medium-low heat for 40–50 minutes, or until the custard is set. Insert a toothpick into the center; it should come out clean.
  5. Remove the flan from the steamer and allow it to cool completely. Refrigerate for at least 2 hours or until thoroughly chilled.
  6. To serve, run a knife around the edges of the llanera and carefully invert the flan onto a serving plate.
