Leche Flan
Leche Flan is a rich and creamy Filipino custard dessert made with egg yolks, sweetened condensed milk, evaporated milk, and vanilla. Topped with a smooth layer of golden caramel, this classic dessert is steamed until perfectly silky and melts in your mouth with every bite. Ingredients
10 egg yolks
1 can (300ml) sweetened condensed milk
1 can (370ml) evaporated milk
1 tsp vanilla extract
cup granulated sugar (for caramel)
Directions
- Place the granulated sugar in a llanera or heatproof mold over low heat. Allow it to melt until it turns into a golden caramel, then carefully swirl to coat the bottom evenly. Set aside to cool and harden.
- In a mixing bowl, gently whisk the egg yolks. Add the sweetened condensed milk, evaporated milk, and vanilla extract. Stir until well combined without creating too many bubbles.
- Strain the custard mixture through a fine-mesh sieve into the prepared llanera to achieve a smooth texture.
- Cover the llanera tightly with aluminum foil. Steam over medium-low heat for 40–50 minutes, or until the custard is set. Insert a toothpick into the center; it should come out clean.
- Remove the flan from the steamer and allow it to cool completely. Refrigerate for at least 2 hours or until thoroughly chilled.
- To serve, run a knife around the edges of the llanera and carefully invert the flan onto a serving plate.
