Ingredients
6 medium ripe tomatoes, chopped
1 medium onion, chopped
4 cloves garlic, minced
2 cups vegetable or chicken broth
1/2 cup heavy cream
2 tbsp butter
1 tsp dried basil
1/2 tsp salt
1/2 tsp ground black pepper
1 tsp sugar (optional)
8 slices bread
4 slices cheddar cheese
4 slices mozzarella cheese
4 tbsp butter
Directions
- Prepare the tomato soup: Melt the butter in a large pot over medium heat. Sauté the onion and garlic for 3–4 minutes until softened and fragrant.
- Add the chopped tomatoes, broth, dried basil, salt, and ground black pepper. Bring to a boil, then reduce the heat and simmer for 15–20 minutes until the tomatoes are soft.
- Carefully blend the soup using a blender or immersion blender until smooth. Return it to the pot and stir in the heavy cream. Add sugar if desired and simmer for another 2–3 minutes. Adjust the seasoning to taste.
- Prepare the grilled cheese: Place cheddar and mozzarella cheese between two slices of bread to make four sandwiches.
- Spread butter on the outside of each sandwich. Heat a skillet over medium-low heat and cook the sandwiches for 2–3 minutes per side, or until the bread is golden brown and the cheese is completely melted.
- Remove the sandwiches from the pan and cut them in half.
