Corn Chowder

Ingredients
4 cups sweet corn kernels, fresh or canned
2 medium potatoes, peeled and diced
1 medium carrot, diced
1 medium onion, chopped
3 cloves garlic, minced
4 cups vegetable or chicken broth
1 cup fresh milk
1 cup heavy cream
3 tbsp butter
2 tbsp all-purpose flour
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp dried thyme
2 tbsp fresh parsley, chopped (optional)
Directions
- Melt the butter in a large pot over medium heat. Add the onion, garlic, and carrot. Sauté for 3–4 minutes until the vegetables soften and become fragrant.
- Sprinkle the flour over the vegetables and stir continuously for about 1 minute to form a light roux.
- Gradually pour in the vegetable or chicken broth while stirring to prevent lumps from forming.
- Add the potatoes, corn, dried thyme, salt, and ground black pepper. Bring the mixture to a boil.
- Reduce the heat, cover, and simmer for 15–20 minutes, or until the potatoes are tender.
- Stir in the fresh milk and heavy cream. Cook over low heat for another 3–5 minutes, stirring occasionally. Do not let the soup boil after adding the dairy.
- For a thicker texture, lightly mash some of the potatoes and corn with the back of a spoon.
- Taste and adjust the seasoning as needed. Garnish with fresh parsley if desired.
