Chopsuey
Chopsuey is a colorful and nutritious Filipino vegetable stir-fry made with a variety of fresh vegetables, tender chicken or pork, and shrimp, all cooked in a light, savory sauce. Packed with carrots, broccoli, cauliflower, cabbage, bell peppers, and snap peas, this wholesome dish is both flavorful and satisfying. Ingredients
250g chicken breast or pork, thinly sliced
150g shrimp, peeled and deveined (optional)
1 cup broccoli florets
1 cup cauliflower florets
1 medium carrot, sliced diagonally
1 cup cabbage, chopped
1/2 cup snap peas
1 red bell pepper, sliced
1 medium onion, sliced
4 cloves garlic, minced
1 cup chicken broth
2 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp cornstarch dissolved in 2 tbsp water
2 tbsp cooking oil
1/2 tsp ground black pepper
Directions
- Heat the cooking oil in a large pan or wok over medium heat. Sauté the garlic and onion until fragrant.
- Add the sliced chicken or pork and cook until lightly browned. If using shrimp, add them and cook until they turn pink.
- Pour in the chicken broth, oyster sauce, and soy sauce. Bring to a gentle simmer.
- Add the carrots, broccoli, cauliflower, and snap peas. Cook for 5–7 minutes until the vegetables are tender-crisp.
- Stir in the cabbage and bell pepper, then cook for another 2–3 minutes.
- Add the cornstarch slurry and stir until the sauce thickens. Season with ground black pepper to taste.
- Transfer to a serving dish and serve hot with steamed rice.
