Carrot Cake

Ingredients
2 cups all-purpose flour
1 1/2 cups grated carrots
1 cup brown sugar
1/2 cup white sugar
3/4 cup cooking oil
3 large eggs
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/2 cup chopped walnuts (optional)
225 g cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
2 tbsp butter, softened
Directions
- Preheat the oven to 175°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.
- In a bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In another bowl, whisk together the eggs, brown sugar, white sugar, cooking oil, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the grated carrots and chopped walnuts if using. Do not overmix.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cake cool completely before frosting.
- To make the frosting, beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla extract, then beat until creamy.
- Spread the cream cheese frosting evenly over the cooled cake.
- Slice and serve your delicious Carrot Cake!
