Bibingka

Bibingka is a traditional Filipino rice cake made with rice flour, coconut milk, eggs, and sugar, traditionally baked until lightly golden and fragrant. Soft, moist, and slightly chewy, this beloved Filipino treat is commonly topped with salted egg, grated coconut, and butter for a delicious combination of sweet and savory flavors. Perfect for breakfast, merienda, or holiday gatherings, Bibingka is best served warm.

Ingredients

2 cups rice flour

1/2 cup all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1 1/2 cups coconut milk

1/2 cup fresh milk

1/4 cup melted butter

1 tsp vanilla extract

2 salted eggs, sliced

1/2 cup grated coconut

2 tbsp butter, for topping

1/4 cup grated cheddar cheese (optional)

Directions

  1. Preheat the oven to 375°F (190°C). Lightly grease a round baking pan or line it with banana leaves if available.
  2. In a large bowl, combine the rice flour, all-purpose flour, sugar, baking powder, and salt. Mix well.
  3. In a separate bowl, whisk together the eggs, coconut milk, fresh milk, melted butter, and vanilla extract.
  4. Gradually pour the wet ingredients into the dry ingredients. Whisk until the batter is smooth and well combined.
  5. Pour the batter into the prepared pan. Arrange the sliced salted eggs on top and sprinkle with grated cheddar cheese if desired.
  6. Bake for 20–25 minutes, or until the bibingka is set and the top is lightly golden.
  7. Remove from the oven and immediately brush the top with butter.
  8. Sprinkle generously with grated coconut and add additional butter if desired.
  9. Slice and serve warm. Enjoy your soft, fragrant, and delicious Bibingka!
