Beef Vegetable Soup

Ingredients

500g beef chuck or beef stew meat, cut into cubes

8 cups beef broth or water

2 medium potatoes, peeled and cubed

2 medium carrots, sliced

1 cup green beans, cut into pieces

1 cup corn kernels

1 medium tomato, diced

1 medium onion, chopped

4 cloves garlic, minced

2 tbsp cooking oil

2 tbsp tomato sauce

2 bay leaves

1/2 tsp ground black pepper

1/2 tsp salt

2 tbsp fresh parsley, chopped (optional)

Directions

  1. Heat the cooking oil in a large pot over medium-high heat. Add the beef cubes and sear for 5–7 minutes, turning occasionally, until browned on all sides.
  2. Add the garlic and onion, then sauté for 2–3 minutes until fragrant and softened.
  3. Pour in the beef broth and add the tomato sauce and bay leaves. Bring to a boil, then reduce the heat, cover, and simmer for 45–60 minutes, or until the beef is tender.
  4. Add the potatoes and carrots. Continue simmering for 10–15 minutes, or until the vegetables begin to soften.
  5. Add the green beans, corn, and diced tomato. Cook for another 5–8 minutes, or until all the vegetables are tender but not mushy.
  6. Season with salt and ground black pepper. Remove the bay leaves and adjust the seasoning to taste.
  7. Garnish with fresh parsley if desired.
