Beef Vegetable Soup

Ingredients
500g beef chuck or beef stew meat, cut into cubes
8 cups beef broth or water
2 medium potatoes, peeled and cubed
2 medium carrots, sliced
1 cup green beans, cut into pieces
1 cup corn kernels
1 medium tomato, diced
1 medium onion, chopped
4 cloves garlic, minced
2 tbsp cooking oil
2 tbsp tomato sauce
2 bay leaves
1/2 tsp ground black pepper
1/2 tsp salt
2 tbsp fresh parsley, chopped (optional)
Directions
- Heat the cooking oil in a large pot over medium-high heat. Add the beef cubes and sear for 5–7 minutes, turning occasionally, until browned on all sides.
- Add the garlic and onion, then sauté for 2–3 minutes until fragrant and softened.
- Pour in the beef broth and add the tomato sauce and bay leaves. Bring to a boil, then reduce the heat, cover, and simmer for 45–60 minutes, or until the beef is tender.
- Add the potatoes and carrots. Continue simmering for 10–15 minutes, or until the vegetables begin to soften.
- Add the green beans, corn, and diced tomato. Cook for another 5–8 minutes, or until all the vegetables are tender but not mushy.
- Season with salt and ground black pepper. Remove the bay leaves and adjust the seasoning to taste.
- Garnish with fresh parsley if desired.
