Banana Cue
Banana Cue is a popular Filipino street food made with sweet and ripe saba bananas coated in caramelized brown sugar and deep-fried until golden and glossy. Served on bamboo skewers, this simple and delicious snack offers a satisfying combination of soft, naturally sweet bananas and a crisp caramel coating. Perfect for merienda or a sweet afternoon treat, Banana Cue is best enjoyed warm.

Ingredients
8 ripe saba bananas, peeled
1 cup brown sugar
1 cup cooking oil
2 tbsp sesame seeds (optional)
4 bamboo skewers
Directions
- Peel the saba bananas and set them aside.
- Heat the cooking oil in a deep pan over medium heat.
- Carefully add the brown sugar to the hot oil and allow it to begin melting for 1–2 minutes without stirring too much.
- Add the saba bananas to the pan and gently roll them in the caramelizing sugar.
- Fry the bananas for 5–8 minutes, turning them occasionally until they become golden brown and evenly coated with caramelized sugar.
- Sprinkle with sesame seeds if desired and cook for another 1 minute.
- Carefully remove the bananas from the pan and allow excess oil and caramel to drip off.
- Thread 2 bananas onto each bamboo skewer.
- Serve warm and enjoy your sweet and delicious Banana Cue!
