Baked Salmon with Roasted Vegetables
Baked Salmon with Roasted Vegetables is a healthy and flavorful meal featuring tender salmon fillets baked with fresh vegetables and seasoned with garlic, lemon, and herbs. The salmon becomes moist and flaky while the vegetables roast to a deliciously tender texture with lightly caramelized edges. Ingredients
4 salmon fillets (about 150g each)
2 cups broccoli florets
1 medium carrot, sliced
1 red bell pepper, sliced
1 zucchini, sliced
1 medium red onion, sliced
3 tbsp olive oil
4 cloves garlic, minced
1 lemon, sliced
1 tsp dried oregano
1/2 tsp paprika
1 tsp salt
1/2 tsp ground black pepper
1 tbsp fresh parsley, chopped (optional)
Directions
- Preheat the oven to 400°F (200°C). Line a large baking tray with parchment paper or lightly grease it.
- Arrange the broccoli, carrots, bell pepper, zucchini, and red onion on the baking tray. Drizzle with 2 tablespoons of olive oil and season with half of the minced garlic, salt, and ground black pepper. Toss until evenly coated.
- Roast the vegetables for 10 minutes to allow them to begin cooking.
- Pat the salmon fillets dry and place them among the vegetables. Brush the salmon with the remaining olive oil and garlic, then season with oregano, paprika, salt, and pepper. Place lemon slices on top of each fillet.
- Return the tray to the oven and bake for 12–15 minutes, or until the salmon is fully cooked and flakes easily with a fork and the vegetables are tender.
- Remove from the oven and garnish with fresh parsley and additional lemon juice, if desired.
