Pork Belly Hamonado

Ingredients
1 kg pork belly
2 cups pineapple juice
1/2 cup soy sauce
1/2 cup brown sugar
6 cloves garlic, minced
1 small onion, sliced
1/2 tsp ground black pepper
1 tbsp cooking oil
1 cup pineapple chunks
1 cup water
2 tbsp raisins (optional)
Salt to taste
Directions
- Clean the pork belly and pat it dry. Cut into large serving pieces if desired.
- In a large bowl, combine the pineapple juice, soy sauce, brown sugar, garlic, onion, and black pepper. Add the pork belly and marinate for at least 30 minutes.
- Heat the cooking oil in a large pot over medium heat. Remove the pork from the marinade and sear each side until lightly browned.
- Pour the marinade and water into the pot with the pork.
- Bring the mixture to a boil, then lower the heat. Cover and simmer for 45–60 minutes, or until the pork becomes tender.
- Add the pineapple chunks and raisins, if using. Continue cooking for 10–15 minutes.
- Remove the cover and allow the sauce to simmer until it thickens and lightly coats the pork.
- Taste the sauce and adjust the seasoning with salt or additional sugar if needed.
- Serve hot with steamed rice and spoon the sweet and savory sauce over the pork.
