Molten Chocolate Cake

Molten Chocolate Cake is a rich and indulgent dessert with a soft, chocolatey cake exterior and a warm, gooey chocolate center. Also known as a lava cake, this elegant treat is surprisingly easy to prepare and perfect for special occasions or whenever you want a decadent chocolate dessert. Serve it warm with powdered sugar, fresh berries, or a scoop of vanilla ice cream.

Ingredients

115 g dark chocolate, chopped

1/2 cup butter

1/4 cup all-purpose flour

1/2 cup powdered sugar

2 egg yolks

1 tsp vanilla extract

1/4 tsp salt

1 tbsp butter, for greasing

1 tbsp cocoa powder, for dusting

Powdered sugar for serving (optional)

Vanilla ice cream for serving (optional)

Directions

  1. Preheat the oven to 220°C (425°F). Grease four small ramekins with butter and lightly dust them with cocoa powder.
  2. Melt the dark chocolate and butter together in a heatproof bowl over a pot of gently simmering water. Stir until smooth, then set aside to cool slightly.
  3. In a separate bowl, whisk the eggs, egg yolks, powdered sugar, vanilla extract, and salt until smooth and slightly thickened.
  4. Gradually add the melted chocolate mixture to the egg mixture and stir until well combined.
  5. Gently fold in the flour until just incorporated. Avoid overmixing.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 10–12 minutes, or until the edges are firm but the centers are still soft and slightly jiggly.
  8. Remove from the oven and let the cakes rest for 1 minute.
  9. Carefully invert each ramekin onto a serving plate and gently lift it away.
  10. Dust with powdered sugar and serve immediately with vanilla ice cream if desired.
