Buko Pandan
Buko Pandan is a classic Filipino dessert made with tender young coconut, pandan-flavored jelly, and a creamy, sweet mixture. Ingredients
2 cups young coconut (buko), shredded
1 pack pandan-flavored gelatin
1 can all-purpose cream
1/2 cup sweetened condensed milk
1/2 cup nata de coco
1/2 cup cooked sago or tapioca pearls (optional)
1/2 cup sugar (optional)
4 cups water, for gelatin
Directions
- Prepare the pandan-flavored gelatin according to the package instructions. Allow it to cool and set completely, then cut into small cubes.
- In a large mixing bowl, combine the shredded young coconut, pandan gelatin cubes, nata de coco, and cooked sago if using.
- Add the all-purpose cream and sweetened condensed milk.
- Gently mix all the ingredients until well combined.
- Taste and add sugar if you prefer a sweeter dessert.
- Cover and refrigerate for at least 2 hours before serving.
