Banana Cue

Banana Cue is a popular Filipino street food made with sweet and ripe saba bananas coated in caramelized brown sugar and deep-fried until golden and glossy. Served on bamboo skewers, this simple and delicious snack offers a satisfying combination of soft, naturally sweet bananas and a crisp caramel coating. Perfect for merienda or a sweet afternoon treat, Banana Cue is best enjoyed warm.

Ingredients

8 ripe saba bananas, peeled

1 cup brown sugar

2 tbsp sesame seeds (optional)

Directions

  1. Peel the saba bananas and set them aside.
  2. Heat the cooking oil in a deep pan over medium heat.
  3. Carefully add the brown sugar to the hot oil and allow it to begin melting for 1–2 minutes without stirring too much.
  4. Add the saba bananas to the pan and gently roll them in the caramelizing sugar.
  5. Fry the bananas for 5–8 minutes, turning them occasionally until they become golden brown and evenly coated with caramelized sugar.
  6. Sprinkle with sesame seeds if desired and cook for another 1 minute.
  7. Carefully remove the bananas from the pan and allow excess oil and caramel to drip off.
  8. Thread 2 bananas onto each bamboo skewer.
  9. Serve warm and enjoy your sweet and delicious Banana Cue!
