Stuffed Bell Pepper

Ingredients
4 large bell peppers
500g ground beef
1 cup cooked rice
1 medium onion, finely chopped
3 cloves garlic, minced
1 cup tomato sauce
1 medium tomato, diced
1 cup grated cheddar or mozzarella cheese
1 tbsp olive oil or cooking oil
1 tsp dried oregano
1/2 tsp paprika
1/2 tsp ground black pepper
1/2 tsp salt
2 tbsp fresh parsley, chopped (optional)
Directions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Arrange the peppers upright in a baking dish.
- Heat the cooking oil in a large pan over medium heat. Sauté the garlic and onion until fragrant and softened.
- Add the ground beef and cook until browned and fully cooked. Stir in the tomato, tomato sauce, oregano, paprika, salt, and ground black pepper. Simmer for 5–7 minutes.
- Add the cooked rice to the beef mixture and stir until everything is evenly combined. Remove from heat.
- Spoon the beef and rice mixture evenly into each bell pepper, filling them generously.
- Sprinkle the grated cheese over the top of each stuffed pepper.
- Cover the baking dish loosely with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 5–10 minutes, or until the peppers are tender and the cheese is melted and lightly golden.
- Garnish with fresh parsley if desired. Serve warm and enjoy your delicious Stuffed Bell Peppers!
