Pumpkin Soup

Ingredients

1kg pumpkin, peeled, seeded, and cut into cubes

1 medium onion, chopped

4 cloves garlic, minced

4 cups vegetable or chicken broth

1/2 cup heavy cream

2 tbsp butter or olive oil

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 tsp ground black pepper

1/2 tsp salt

1 tsp sugar (optional)

2 tbsp fresh parsley or pumpkin seeds, for garnish (optional)

Directions

  1. Melt the butter or heat the olive oil in a large pot over medium heat. Add the onion and garlic, then sauté for 3–4 minutes until softened and fragrant.
  2. Add the cubed pumpkin and cook for 3–5 minutes, stirring occasionally.
  3. Pour in the vegetable or chicken broth. Add the cinnamon, nutmeg, salt, and ground black pepper. Stir well and bring to a boil.
  4. Reduce the heat, cover, and simmer for 20–25 minutes, or until the pumpkin is very tender and easily pierced with a fork.
  5. Carefully blend the soup using an immersion blender or regular blender until smooth and creamy.
  6. Return the soup to the pot and stir in the heavy cream. Simmer gently for 2–3 minutes. Add sugar if desired to enhance the pumpkin's natural sweetness.
  7. Taste and adjust the seasoning as needed.
  8. Ladle the soup into serving bowls and garnish with fresh parsley, pumpkin seeds, or a drizzle of cream if desired. Serve hot and enjoy your comforting Pumpkin Soup!
