Pumpkin Soup

Ingredients
1kg pumpkin, peeled, seeded, and cut into cubes
1 medium onion, chopped
4 cloves garlic, minced
4 cups vegetable or chicken broth
1/2 cup heavy cream
2 tbsp butter or olive oil
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp ground black pepper
1/2 tsp salt
1 tsp sugar (optional)
2 tbsp fresh parsley or pumpkin seeds, for garnish (optional)
Directions
- Melt the butter or heat the olive oil in a large pot over medium heat. Add the onion and garlic, then sauté for 3–4 minutes until softened and fragrant.
- Add the cubed pumpkin and cook for 3–5 minutes, stirring occasionally.
- Pour in the vegetable or chicken broth. Add the cinnamon, nutmeg, salt, and ground black pepper. Stir well and bring to a boil.
- Reduce the heat, cover, and simmer for 20–25 minutes, or until the pumpkin is very tender and easily pierced with a fork.
- Carefully blend the soup using an immersion blender or regular blender until smooth and creamy.
- Return the soup to the pot and stir in the heavy cream. Simmer gently for 2–3 minutes. Add sugar if desired to enhance the pumpkin's natural sweetness.
- Taste and adjust the seasoning as needed.
- Ladle the soup into serving bowls and garnish with fresh parsley, pumpkin seeds, or a drizzle of cream if desired. Serve hot and enjoy your comforting Pumpkin Soup!
