Pork Barbecue

Pork Barbecue is a popular Filipino grilled dish made with tender slices of pork marinated in a flavorful blend of soy sauce, calamansi, garlic, brown sugar, and spices. Ingredients

1kg pork shoulder or pork belly, sliced into thin strips

1/4 cup soy sauce

1/4 cup calamansi juice (or lemon juice)

1/4 cup brown sugar

6 cloves garlic, minced

tsp ground black pepper

2 tbsp banana ketchup

2 tbsp oyster sauce

2 tbsp cooking oil

Bamboo skewers, soaked in water

Directions

  1. In a large bowl, combine the soy sauce, calamansi juice, brown sugar, garlic, ground black pepper, banana ketchup, oyster sauce, and cooking oil. Mix well until the sugar dissolves.
  2. Add the pork strips and coat them evenly with the marinade. Cover and refrigerate for at least 4 hours or overnight for the best flavor.
  3. Thread the marinated pork onto the soaked bamboo skewers, leaving a small space between each piece for even cooking.
  4. Grill the pork barbecue over medium-hot charcoal for 12–15 minutes, turning occasionally and basting with the remaining marinade until the pork is fully cooked and lightly caramelized.
  5. Transfer to a serving platter and serve hot with steamed rice, pickled vegetables, or your favorite dipping sauce. Enjoy!
