Maruya
Maruya is a classic Filipino banana fritter made with ripe saba bananas coated in a lightly sweetened batter and fried until golden brown and crispy. Soft and tender on the inside with a delightfully crisp exterior, this well-loved snack is often dusted with sugar or served with a drizzle of condensed milk. Ingredients
6 ripe saba bananas, peeled and sliced lengthwise
1 cup all-purpose flour
2 tbsp granulated sugar
1 tsp baking powder
1/2 cup fresh milk
1 large egg
1 tsp vanilla extract (optional)
1/4 tsp salt
2 cups cooking oil, for frying
Granulated sugar, for coating (optional)
Directions
- In a mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Add the egg, fresh milk, and vanilla extract, then mix until a smooth batter forms.
- Lightly flatten each saba banana with the back of a fork while keeping the slices intact.
- Dip each flattened banana into the batter, making sure it is evenly coated.
- Heat the cooking oil in a frying pan over medium heat. Carefully place the coated bananas into the hot oil.
- Fry for 2–3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels to remove excess oil.
- Sprinkle with granulated sugar while still warm, if desired. Transfer to a serving plate and enjoy your crispy and delicious Maruya!
