Inihaw na Liempo

Inihaw na Liempo is a popular Filipino grilled pork belly dish marinated in a savory blend of soy sauce, calamansi juice, garlic, brown sugar, and spices. Grilled over hot charcoal until perfectly caramelized and slightly charred, the pork becomes tender, juicy, and packed with smoky flavor. This delicious dish is a favorite at family gatherings, backyard barbecues, and celebrations. Best served hot with steamed rice and a side of spicy vinegar or toyomansi dipping sauce, Inihaw na Liempo is a true Filipino classic.

Ingredients

1kg pork belly (liempo), sliced into serving pieces

1/4 cup soy sauce

1/4 cup calamansi juice

6 cloves garlic, minced

2 tbsp brown sugar

1 tsp ground black pepper

2 tbsp oyster sauce

2 tbsp banana ketchup

1 tbsp cooking oil

1 tbsp butter, melted (for basting)

Directions

  1. In a large bowl, combine the soy sauce, calamansi juice, garlic, brown sugar, ground black pepper, oyster sauce, banana ketchup, and cooking oil. Mix well until the sugar dissolves.
  2. Add the pork belly slices and coat them evenly with the marinade. Cover and refrigerate for at least 4 hours or overnight for the best flavor.
  3. Preheat the grill to medium heat. Remove the pork from the marinade and place it on the grill.
  4. Grill the pork for 15–20 minutes, turning occasionally and basting with the remaining marinade and melted butter until the meat is fully cooked and nicely caramelized with light char marks.
  5. Transfer the grilled pork to a serving platter and let it rest for 5 minutes before slicing, if needed.
  6. Serve hot with steamed rice and your favorite dipping sauce, such as spicy vinegar or toyomansi. Enjoy!
