Ginisang Sayote

Ginisang Sayote is a simple and nutritious Filipino vegetable dish made with tender chayote sautéed with garlic, onions, and tomatoes. Often cooked with ground pork or shrimp for added flavor, this light yet satisfying dish is seasoned with fish sauce and simmered until the vegetables are tender. Ingredients

2 medium sayote (chayote), peeled, seeded, and julienned

250g ground pork (or shrimp, optional)

1 medium onion, chopped

3 cloves garlic, minced

2 medium tomatoes, diced

1 tbsp fish sauce

1/2 cup water

2 tbsp cooking oil

1/2 tsp ground black pepper

Salt, to taste

1 spring onion, chopped (optional, for garnish)

Directions

  1. Heat the cooking oil in a pan over medium heat. Sauté the garlic until fragrant, then add the onions and tomatoes. Cook until the tomatoes become soft.
  2. Add the ground pork and cook until browned. Stir in the fish sauce and cook for another 2–3 minutes.
  3. Add the julienned sayote and stir well to combine with the pork mixture.
  4. Pour in the water, cover the pan, and simmer for 5–7 minutes or until the sayote is tender but still slightly crisp.
  5. Season with ground black pepper and salt to taste. Stir gently and cook for another minute.
  6. Transfer to a serving dish, garnish with chopped spring onions if desired, and serve hot with steamed rice. Enjoy!
