Ginisang Monggo
Ginisang Monggo is a hearty and nutritious Filipino dish made with mung beans simmered until tender and sautéed with garlic, onions, tomatoes, and your choice of pork, shrimp, or smoked fish. Enhanced with leafy greens such as spinach or malunggay, this comforting stew is rich in flavor and packed with protein and essential nutrients. A staple in many Filipino households, Ginisang Monggo is perfect for everyday meals and is best enjoyed hot with steamed rice.
Ingredients
1 cup dried mung beans (monggo), rinsed
250g pork belly, sliced (or shrimp or flaked smoked fish)
1 medium onion, chopped
4 cloves garlic, minced
2 medium tomatoes, diced
5 cups water
1 tbsp fish sauce
2 tbsp cooking oil
2 cups spinach or malunggay leaves
1/2 tsp ground black pepper
Salt, to taste
Directions
- In a pot, combine the mung beans and water. Bring to a boil, then reduce the heat and simmer for 30–35 minutes, or until the mung beans are soft. Set aside.
- Heat the cooking oil in a separate pan over medium heat. Sauté the garlic until fragrant, then add the onions and tomatoes. Cook until the tomatoes become soft.
- Add the sliced pork and cook until lightly browned. Stir in the fish sauce and cook for another 2–3 minutes.
- Pour the cooked mung beans along with their cooking liquid into the pan. Stir well and simmer for 10 minutes to blend the flavors.
- Add the spinach or malunggay leaves and cook for 1–2 minutes, just until wilted. Season with ground black pepper and salt to taste.
- Transfer to a serving bowl and serve hot with steamed rice. Enjoy!
