Ingredients
6 medium ripe tomatoes, chopped
1 medium onion, chopped
4 cloves garlic, minced
2 cups vegetable or chicken broth
1 cup heavy cream
2 tbsp butter
1 tbsp tomato paste
1 tsp dried basil
1/2 tsp salt
1/2 tsp ground black pepper
1 tsp sugar (optional)
2 tbsp fresh parsley or basil, chopped (optional)
Directions
- Melt the butter in a large pot over medium heat. Add the onion and garlic, then sauté for 3–4 minutes until softened and fragrant.
- Add the chopped tomatoes and tomato paste. Cook for 5 minutes, stirring occasionally, until the tomatoes begin to soften.
- Pour in the vegetable or chicken broth and add the dried basil, salt, and ground black pepper. Bring to a boil.
- Reduce the heat, cover, and simmer for 15–20 minutes, or until the tomatoes are completely tender.
- Carefully blend the soup using an immersion blender or regular blender until smooth and creamy.
- Return the soup to the pot and stir in the heavy cream. Simmer gently for another 2–3 minutes. Add sugar if desired to balance the acidity.
- Taste and adjust the seasoning as needed. Garnish with fresh parsley or basil.
