Corn Chowder

Ingredients

4 cups sweet corn kernels, fresh or canned

2 medium potatoes, peeled and diced

1 medium carrot, diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup fresh milk

1 cup heavy cream

3 tbsp butter

2 tbsp all-purpose flour

1/2 tsp salt

1/2 tsp ground black pepper

1/2 tsp dried thyme

2 tbsp fresh parsley, chopped (optional)

Directions

  1. Melt the butter in a large pot over medium heat. Add the onion, garlic, and carrot. Sauté for 3–4 minutes until the vegetables soften and become fragrant.
  2. Sprinkle the flour over the vegetables and stir continuously for about 1 minute to form a light roux.
  3. Gradually pour in the vegetable or chicken broth while stirring to prevent lumps from forming.
  4. Add the potatoes, corn, dried thyme, salt, and ground black pepper. Bring the mixture to a boil.
  5. Reduce the heat, cover, and simmer for 15–20 minutes, or until the potatoes are tender.
  6. Stir in the fresh milk and heavy cream. Cook over low heat for another 3–5 minutes, stirring occasionally. Do not let the soup boil after adding the dairy.
  7. For a thicker texture, lightly mash some of the potatoes and corn with the back of a spoon.
  8. Taste and adjust the seasoning as needed. Garnish with fresh parsley if desired.
  9. Ladle into serving bowls and serve warm with crusty bread. Enjoy your creamy and delicious Corn Chowder!
