Ingredients
500g chicken breast or boneless chicken thighs
200g egg noodles
8 cups chicken broth
1 medium onion, chopped
3 cloves garlic, minced
2 medium carrots, sliced
2 celery stalks, sliced
2 tbsp cooking oil
1 bay leaf
1/2 tsp ground black pepper
1/2 tsp salt
2 tbsp fresh parsley, chopped
1 tbsp lemon juice (optional)
Directions
- Heat the cooking oil in a large pot over medium heat. Sauté the garlic and onion for 2–3 minutes until fragrant and softened.
- Add the chicken, carrots, and celery. Pour in the chicken broth and add the bay leaf.
- Bring the soup to a boil, then reduce the heat and simmer for 20–25 minutes, or until the chicken is fully cooked and tender.
- Remove the chicken from the pot and shred it into bite-sized pieces. Remove the bay leaf.
- Return the shredded chicken to the pot. Add the egg noodles and cook according to the package instructions, usually 5–8 minutes, until tender.
- Season with salt and ground black pepper. Add lemon juice if desired for a light, refreshing flavor.
- Stir in the chopped fresh parsley and simmer for another 1 minute.
