Bistek Tagalog

Bistek Tagalog is a classic Filipino beef dish made with thinly sliced beef marinated in soy sauce and fresh calamansi juice, then simmered until tender with caramelized onions. Ingredients

500g beef sirloin or beef round, thinly sliced

1/4 cup soy sauce

1/4 cup fresh calamansi juice (or lemon juice)

2 large onions, sliced into rings

4 cloves garlic, minced

1 cup beef broth or water

2 tbsp cooking oil

1 tsp ground black pepper

1 tsp brown sugar (optional)

Salt, to taste

Directions

  1. In a bowl, combine the soy sauce, calamansi juice, garlic, and ground black pepper. Add the beef slices and marinate for 30 minutes.
  2. Heat the cooking oil in a large pan over medium heat. Sauté the onion rings until lightly caramelized. Remove half of the onions and set aside for garnish.
  3. In the same pan, add the marinated beef and cook until lightly browned on both sides.
  4. Pour in the remaining marinade and beef broth. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the beef is tender. Add brown sugar if desired to balance the tanginess.
  5. Return the reserved onion rings to the pan and cook for another 2–3 minutes until slightly softened. Adjust the seasoning with salt if needed.
  6. Transfer the Bistek Tagalog to a serving platter and serve hot with steamed rice.
