Ingredients
3 large ripe bananas, mashed
2 cups rolled oats
1 cup all-purpose flour
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
2 large eggs
1/2 cup fresh milk
1/4 cup melted butter or vegetable oil
1 tsp vanilla extract
1/2 cup chopped nuts or chocolate chips (optional)
Directions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease the muffin cups.
- In a large bowl, mash the ripe bananas until mostly smooth. Add the eggs, fresh milk, melted butter, and vanilla extract. Mix until well combined.
- In a separate bowl, combine the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the banana mixture. Stir gently until just combined. Fold in the chopped nuts or chocolate chips, if desired. Avoid overmixing.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
- Serve warm or at room temperature and enjoy your soft and delicious Banana Oatmeal Muffins!
