Ingredients

4 large baking potatoes

2 tbsp olive oil

1 tsp salt

1/2 tsp ground black pepper

4 tbsp butter

1/2 cup grated cheddar cheese

1/2 cup sour cream

2 tbsp chopped spring onions or chives

4 strips bacon, cooked and crumbled (optional)

Directions

  1. Preheat the oven to 425°F (220°C). Wash and scrub the potatoes thoroughly, then pat them completely dry.
  2. Pierce each potato several times with a fork. Rub the potatoes evenly with olive oil, then season with salt and ground black pepper.
  3. Place the potatoes directly on the oven rack or on a baking tray. Bake for 45–50 minutes, or until the skin is crisp and a fork easily passes through the center.
  4. Remove the potatoes from the oven and carefully make a lengthwise cut across the top of each potato. Gently squeeze the sides to open them.
  5. Add 1 tablespoon of butter to each potato and top with grated cheddar cheese. Return to the oven for 2–3 minutes until the cheese melts.
  6. Top with sour cream, chopped spring onions or chives, and crumbled bacon if desired.
  7. Serve immediately while hot and enjoy your delicious Baked Potato!
