Pork Sinigang
Pork Sinigang is a classic Filipino sour soup made with tender pork simmered in a savory tamarind-based broth with fresh vegetables. Its tangy, comforting flavor makes it a family favorite, perfect for rainy days or any time you crave a hearty, home-cooked meal.

Ingredients
1 kg pork belly or pork ribs, cut into serving pieces
8 cups water
1 large onion, quartered
2 medium tomatoes, quartered
1 pack (40g) sinigang mix (tamarind soup base)
1 medium radish (labanos), sliced
1 medium eggplant, sliced
10 pieces string beans (sitaw), cut into 2-inch lengths
2 pieces long green chili (siling pangsigang)
2 cups kangkong (water spinach)
2 tablespoons fish sauce (patis)
Salt and ground black pepper to taste
Directions
- In a large pot, combine the pork and water. Bring to a boil and skim off any scum that rises to the surface.
- Add the onion and tomatoes. Lower the heat and simmer for 45–60 minutes, or until the pork is tender.
- Stir in the fish sauce and the sinigang mix. Mix well until completely dissolved.
- Add the radish and cook for 5 minutes. Then add the eggplant, string beans, and long green chili. Continue simmering for another 5–7 minutes until the vegetables are tender.
- Add the kangkong and cook for 1–2 minutes, just until the leaves are wilted.
- Taste the broth and adjust the seasoning with salt and ground black pepper if needed.
- Serve hot with steamed rice and enjoy the comforting sour flavor of this classic Filipino dish.
