Pork Sisig

Pork Sisig is a classic Filipino sizzling dish made with tender and crispy pork, seasoned with savory spices, onions, and calamansi for a delicious balance of rich, tangy, and slightly spicy flavors. Ingredients

500g pork belly, boiled and chopped

1 large onion, finely chopped

3 cloves garlic, minced

2 tbsp soy sauce

2 tbsp calamansi juice

1 tbsp mayonnaise

1 tsp oyster sauce

1 tsp chili flakes (optional)

1/2 tsp ground black pepper

1 tbsp cooking oil

1 green chili, sliced (optional)

1 egg (optional, for serving)

Directions

  1. Heat the cooking oil in a pan over medium heat. Sauté the garlic until fragrant, then add the chopped onions and cook until softened.
  2. Add the chopped pork belly and cook until lightly browned and slightly crispy.
  3. Stir in the soy sauce, oyster sauce, calamansi juice, ground black pepper, and chili flakes. Cook for 2–3 minutes, stirring occasionally.
  4. Turn off the heat and mix in the mayonnaise until evenly coated. Add the sliced green chili if desired.
  5. Transfer the sisig to a preheated sizzling plate. Crack an egg on top, if using, and let it cook slightly before mixing. Serve immediately while hot with steamed rice.
