Pork Adobo
Pork Adobo is one of the Philippines' most iconic dishes, featuring tender pork slowly simmered in a rich blend of soy sauce, vinegar, garlic, bay leaves, and black peppercorns. Its savory, tangy, and slightly sweet flavor makes it a timeless favorite that's perfect for everyday family meals.

Ingredients
1 kg pork belly or pork shoulder, cut into serving pieces
½ cup soy sauce
⅓ cup white vinegar
1 cup water
8 cloves garlic, crushed
3 bay leaves
1 teaspoon whole black peppercorns
2 tablespoons cooking oil
1 teaspoon brown sugar (optional)
Salt and ground black pepper to taste
2 stalks green onions, chopped (optional, for garnish)
Directions
- In a bowl, combine the pork, soy sauce, and half of the crushed garlic. Marinate for at least 30 minutes for better flavor.
- Heat the cooking oil in a large pot over medium heat. Sauté the remaining garlic until lightly golden and fragrant.
- Add the marinated pork and cook for 5–7 minutes, turning occasionally until lightly browned.
- Pour in the remaining marinade, water, vinegar, bay leaves, and whole black peppercorns. Bring to a boil without stirring.
- Reduce the heat to low, cover, and simmer for 40–50 minutes, or until the pork becomes tender.
- If using brown sugar, stir it in and continue simmering uncovered for 10–15 minutes until the sauce thickens slightly. Adjust the seasoning with salt and ground black pepper if needed.
- Transfer to a serving dish, garnish with chopped green onions if desired, and serve hot with steamed rice.
