Chicken Sopas

Chicken Sopas is a creamy Filipino macaroni soup made with tender chicken, vegetables, and elbow macaroni simmered in a rich, flavorful broth. This comforting dish is perfect for chilly weather, family gatherings, or whenever you need a warm and satisfying meal.

Ingredients

500 g chicken breast or chicken thigh, cut into bite-sized pieces

2 tablespoons butter or cooking oil

1 medium onion, chopped

3 cloves garlic, minced

1 medium carrot, diced

1 cup cabbage, shredded

1 cup evaporated milk

1 cup elbow macaroni

6 cups chicken broth or water

1 chicken bouillon cube (optional)

½ teaspoon ground black pepper

Salt to taste

2 tablespoons chopped spring onions (optional, for garnish)

Directions

  1. Heat the butter or cooking oil in a large pot over medium heat. Sauté the onion and garlic until fragrant and the onion becomes translucent.
  2. Add the chicken pieces and cook for 5–7 minutes until lightly browned.
  3. Pour in the chicken broth or water and add the chicken bouillon cube, if using. Bring to a boil, then reduce the heat and simmer for 15–20 minutes until the chicken is tender.
  4. Stir in the elbow macaroni and cook for 8–10 minutes, or until the pasta is tender.
  5. Add the diced carrots and cook for 3–4 minutes until slightly tender.
  6. Pour in the evaporated milk, then add the shredded cabbage. Simmer for another 2–3 minutes, stirring occasionally.
  7. Season with ground black pepper and salt to taste. Garnish with chopped spring onions if desired, and serve hot.
