Chicken Sopas
Chicken Sopas is a creamy Filipino macaroni soup made with tender chicken, vegetables, and elbow macaroni simmered in a rich, flavorful broth. This comforting dish is perfect for chilly weather, family gatherings, or whenever you need a warm and satisfying meal.

Ingredients
500 g chicken breast or chicken thigh, cut into bite-sized pieces
2 tablespoons butter or cooking oil
1 medium onion, chopped
3 cloves garlic, minced
1 medium carrot, diced
1 cup cabbage, shredded
1 cup evaporated milk
1 cup elbow macaroni
6 cups chicken broth or water
1 chicken bouillon cube (optional)
½ teaspoon ground black pepper
Salt to taste
2 tablespoons chopped spring onions (optional, for garnish)
Directions
- Heat the butter or cooking oil in a large pot over medium heat. Sauté the onion and garlic until fragrant and the onion becomes translucent.
- Add the chicken pieces and cook for 5–7 minutes until lightly browned.
- Pour in the chicken broth or water and add the chicken bouillon cube, if using. Bring to a boil, then reduce the heat and simmer for 15–20 minutes until the chicken is tender.
- Stir in the elbow macaroni and cook for 8–10 minutes, or until the pasta is tender.
- Add the diced carrots and cook for 3–4 minutes until slightly tender.
- Pour in the evaporated milk, then add the shredded cabbage. Simmer for another 2–3 minutes, stirring occasionally.
- Season with ground black pepper and salt to taste. Garnish with chopped spring onions if desired, and serve hot.
