Vegetable Omelet

Ingredients

1/2 medium onion, finely chopped

1/2 red bell pepper, diced

1 medium tomato, diced

1/2 cup spinach, chopped

1/4 cup grated cheddar cheese (optional)

2 tbsp fresh milk

1 tbsp cooking oil or butter

1/2 tsp salt

1/4 tsp ground black pepper

Directions

  1. In a bowl, whisk the eggs with fresh milk, salt, and ground black pepper until well combined.
  2. Heat the cooking oil or butter in a non-stick pan over medium heat. Sauté the onion and bell pepper for 2–3 minutes until slightly softened.
  3. Add the diced tomato and spinach. Cook for another 1–2 minutes until the spinach wilts and the vegetables are tender.
  4. Pour the beaten eggs evenly over the vegetables. Allow the eggs to cook undisturbed for 2–3 minutes until the edges begin to set.
  5. Sprinkle the grated cheddar cheese over one half of the omelet, if desired. Carefully fold the omelet in half.
  6. Continue cooking for another 1–2 minutes until the eggs are fully cooked and the cheese is melted.
