Pork Adobo

Pork Adobo is one of the Philippines' most iconic dishes, featuring tender pork slowly simmered in a rich blend of soy sauce, vinegar, garlic, bay leaves, and black peppercorns. Its savory, tangy, and slightly sweet flavor makes it a timeless favorite that's perfect for everyday family meals.

Ingredients

1 kg pork belly or pork shoulder, cut into serving pieces

½ cup soy sauce

⅓ cup white vinegar

1 cup water

8 cloves garlic, crushed

3 bay leaves

1 teaspoon whole black peppercorns

2 tablespoons cooking oil

1 teaspoon brown sugar (optional)

Salt and ground black pepper to taste

2 stalks green onions, chopped (optional, for garnish)

Directions

  1. In a bowl, combine the pork, soy sauce, and half of the crushed garlic. Marinate for at least 30 minutes for better flavor.
  2. Heat the cooking oil in a large pot over medium heat. Sauté the remaining garlic until lightly golden and fragrant.
  3. Add the marinated pork and cook for 5–7 minutes, turning occasionally until lightly browned.
  4. Pour in the remaining marinade, water, vinegar, bay leaves, and whole black peppercorns. Bring to a boil without stirring.
  5. Reduce the heat to low, cover, and simmer for 40–50 minutes, or until the pork becomes tender.
  6. If using brown sugar, stir it in and continue simmering uncovered for 10–15 minutes until the sauce thickens slightly. Adjust the seasoning with salt and ground black pepper if needed.
  7. Transfer to a serving dish, garnish with chopped green onions if desired, and serve hot with steamed rice.
